This very easy and super delicious recipe was shared with me by a dear friend. Last night I made it and it was a HUGE success!
1 small onion, chopped
1 garlic clove, minced
1 can of coconut milk
1 spoonful of Thai red curry paste (add more for extra heat)
1 tsp brown sugar
salt and pepper to taste
3 boneless, skinless chicken breasts (cut into pieces)
Saute onion and garlic in a little bit of butter. Add coconut milk, Thai red curry paste, brown sugar, salt and pepper. Cook till all curry paste and brown sugar dissolve. Add chicken and simmer to chicken is cooked through.
Serve with plain steamed rice. Serves 3 to 4 people.
