Summer Foods

I have been trying to come up with some cool, refreshing foods to eat since it's been so hot outside. I've made lots of different types of smoothies and have really been enjoying them.
The other night I saw I had some sour cream and salsa and I had an idea. This may be something that has been done by others but this was a first for me. I made a salad dressing by mixing the sour cream and salsa. I thought it was a delicious light dressing. The salsa I used was a pineapple medium heat salsa and that gave it a slightly sweet, slightly hot taste. Does anyone else have any good summer food ideas or recipes they would like to share? I would love to hear them.

Hey Elizabeth,
We make a salmon salad that it's great for lunch. We use wild Alaskan canned salmon from Costco. Mesh it with a fork, put mayo (based on taste), squeeze some lemon, salt, pepper and voila. It's great on sandwiches or if you want to be carb-free use it on lettuce or cabbage leaves. It's great. FYI: I use Veganaise which is a dairy-free, egg-free mayonaise since Rebekah is allergic to eggs. Bon-Appetite! :)
