Coconut Pineapple Rice

I found this great recipe when I was looking through The Grocery Cart Challenge recipe swap. Below is the revised recipe according to what I had on hand. This rice has an awesome blend of flavors.

Coconut Pineapple Rice

2 cups coconut milk (which was one can for me)
1 cup water
1 cup pineapple juice
2 tsp ginger root fresh, minced
1/2 tsp salt
1 cup uncooked rice
1 cup pineapple
1/2 cup scallions, chopped
1/4 Tbsp mint leaves, chopped
2 Tbsp chopped almonds, toasted
lime juice

In a medium saucepan, combine coconut milk, water, ginger and 1/2 teaspoon of salt; bring to a boil over medium-high heat. Stir in rice; reduce heat, cover and simmer until rice is tender and most of liquid is absorbed, about 20 minutes.
Remove from heat; add pineapple, scallions and mint (do not stir). Cover and let stand for 5 minutes. Sprinkle with almonds; fluff rice with a fork. Squeeze some lime juice over rice. Enjoy!
