This corn salsa dip is so delicious you will need to do some portion control. Believe me when I tell you there wont be any left over.
Black Bean & Corn Salsa
2 cans (15 oz) Mexican corn - drained
1 can diced tomatoes with green chilies - drained
1 can black beans - drained
1 cup sour cream
1 cup mayo
1 Tbsp sugar
2 cups shredded cheddar cheese
corn chip "scoops"
Mix all ingredients together. Refrigerate until serving. Scoop and eat with corn chips.
I got the original recipe from the finer things in life but the above recipe is my slightly altered version.
