Salmon Ball

Are you trying to eat healthier this new year? Are you watching your carbs? Or do you just want to try a new recipe?

Here is a delicious Salmon ball recipe. I just mixed it up minus the almonds and parsley and ate it as dip with celery sticks. It was delicious... and just think - there are no carbs and you get Omega 3s from the salmon. It doesn't get much better than this.

Salmon Ball
2 cups canned salmon, drained, flaked and skin and bones removed
8 oz reduced-fat cream cheese, softened
1 Tbsp finely chopped onion
1 Tbsp lemon juice
1 tsp prepared horseradish
1/4 tsp salt
1/4 tsp liquid smoke
1/2 cup chopped almonds
3 Tbsp chopped parsley

In a large bowl, combine the salmon, cream cheese, onion, lemon juice, horseradish, salt and liquid smoke; mix thoroughly. Refrigerate for 4 hours, or until firm enough to form into a ball.

In a small bowl, combine the almonds and parsley. Shape the salmon mixture into a ball. Roll in the almond mixture. Refrigerate for 1 hour, or until chilled.

Makes one 5 inch ball (sixteen 2 Tbsp servings)

Note: Pick out the veggies of your choosing, and hit a home run with our salmon ball.
